Baked Buffalo Cauliflower Bites

INGREDIENTS

  • ▢ 1 large head of cauliflower cut to bites

  • ▢cooking spray

  • ▢ ½ cup flour

  • ▢ ½ cup water (or milk for thicker batter texture)

  • ▢ 2 teaspoons garlic powder

  • ▢ 1 teaspoon paprika

  • ▢ ½ teaspoon salt

  • ▢ ¼ teaspoon black pepper

  • ▢ ½ cup hot sauce (ready made buffalo sauce works too)

  • ▢ 2 tablespoons butter

  • ▢ ½ tablespoon lemon juice

  • ▢ Ranch, blue cheese or dill dip for dipping

  • ▢ Chopped parsley for garnishing


So I spent the last 32 years of my life thinking I hated cooking and that I wasn’t good at it and that I didn’t have the time and that I didn’t want to make the time.

Turns out all of that is a lie.

I have no idea what changed but as of the last 2 months— I suddenly, not only thoroughly enjoy cooking, but I’m actually very good at it. LOL.

Ok— in all fairness I do have an idea what changed and that was the desire to turn my eating habits around to just feel better. This is not the first time I have the desire to clean up my eating habits but it is certainly the first time I experience this with initiative to make my own food versus buying it made.

In this process, there are many other delicious meals + dishes I’ve made but this one is probably the most outside of my comfort zone / zone of ease. I posted the end result on my IG story and I got so many questions about the recipe I figured to share it here :)

I present to you — BAKED BUFFALO CAULIFLOWER BITES — very much inspired by the ones at Earl’s. Although they didn’t turn out exactly like the Earl’s one they were just (or maybe even more) delicious. Sorry Earl ILY.

Alright so here we go.

PREP TIME: 10 MINUTES | COOKING TIME: 40 MINUTES

INSTRUCTIONS

  • Preheat oven to 450°F.

  • Grease a baking sheet with cooking spray

  • Whisk ingredients listed above in a large bowl (flour, water, garlic powder, paprika, lemon juice, salt and pepper) until batter is smooth.

  • Cut cauliflower into bite size pieces. Toss + coat in batter. (Don’t over-coat with batter or the bites will be soggy)

  • Place + space out bites on baking sheet in a single layer

  • Bake for 20 to 25 minutes until lightly browned. Flip halfway through

  • In another bowl, combine the hot sauce and melted butter until well blended. Coat bites with buffalo sauce.

  • Return to the oven and bake until they start to brown- about 15 minutes

  • Garnish with chopped parsley

  • Serve hot with sauce of choice

  • ENJOY!

This was my first time making them and they were DELICIOUS! The only thing I would do differently (+ recommend if you like crispy) is to go easy on the batter. Too much batter will make them soggier rather than crispier— but other than that I loved them and they were a huge hit at my house. LOL.
